Gluten-Free and Lactose-Free Birthday Cake

INGREDIENTS

  • La Granja Original Gluten-Free Cake
  • 1 cup of raspberries and blueberries or red fruits to taste
  • Zest of half an orange
  • 2 Medjool dates
  • 1/2 cup of water
  • 400 gr. of lactose-free cream cheese*
  • Vanilla extract, to taste*
  • All ingredients are gluten and lactose-freE

ELABORATION

  1. Start by designing the shape of your birthday cake. We’ve chosen the number 4, but you can choose any number or shape you like using portions of La Granja Original Gluten-Free Cake. Once you’ve decided on the shape, the next step is to cut the cake portions in half, as we will place the crushed red fruits in the middle.
  2. Once the cake portions are cut in half, use a fork or whisk to crush the red fruits and place them on top of one half of the cake, then place the other half on top.
  3. In a blender, add the zest of half an orange, the two Medjool dates (without skin or pits), and the water. Blend them to make a liquid caramel to sweeten the cream cheese we’ll prepare next. Set it aside.
  4. In a bowl, combine the two tubs of lactose-free cream cheese, the liquid caramel we just made, and vanilla extract to taste (we added a tablespoon). Mix everything until you get a smooth, homogeneous mixture.
  5. Use a spatula to cover the entire cake, as shown in the picture, and decorate it with whatever you like: fruits, flowers, or chocolate.
